Entrapta might be one of my favourite characters. She's just so... I'm not entirely sure what the adjective is, but she's delightful.
Scorpia is fun.
Hordak actually not being much of a leader and mostly just interested in building junk, while also actually being a clone of some even worse asshole was hilarious. Damn he had some complexes for sure.
But the plot always seemed to have something interesting up its sleeve, and it went some directions that I wasn't expecting. I appreciate the thought and creativity that went into the show.
As for Kubo, well, I don't like Buddhism, so I liked the plot. Oh, no wait, that was Princess Kaguya. Both involve evil moon people, but only in Kaguya are the evil moon people made to be obviously Buddhist as opposed to implicitly Buddhist. It certainly played with narrative, though, and I kinda liked that. I don't think Kubo's twists were especially subtle, but straight up murdering so many people? That was unexpected. The giant moon eel at the end was a bit odd, though.
Also, Princess Kaguya doesn't count for arguments about the decline of Western Culture, because it isn't a Western Movie, but it was pretty wonderful and horrifically sad. A rather life affirming story, in so far as Buddhism is life denying (to borrow terms from Nietzsche), because the whole movie is a not so subtle "fuck you" to Buddhism.

Oh I forgot to say my kids are watching Avatar the last air bender. What a great show!
It's got some real artistry and great story telling. And there is a lot of good morals in. The fire nation aren't just evil, the earth adn water countries aren't just all good and wonderful. There is some real depth in there.
