Among the most fun questlines in any Bethesda game is the Shivering Isles DLC line from Oblivion. Sheogorath is as random as Discord from My Little Pony (who is best pony despite not being a pony at all).

Yeah, that's the base game. Its been so long.
Honestly, the gameplay is in some ways superior to current Blizzard Games.

Also, why the hell do so many games have difficulty levels that go directly from "Babies First Video Game" to "The AI is a Cheating Bastard Mode?"

Having those levels doesn't bother me.
But not having anything decent in between is just annoying.

You know what I don't like about a lot of shooters? How does it make sense that as you increase difficulty your enemies turn into bullet sponges and the player is now made of glass?

If there was some middle ground it would be fine, but a lot of games just go right from baby to bastard.
Bethesda and many others do difficulty wrong. They just adjust the numbers a bit so you need more whacks to kill them and they need less to kill you. Rome: Total War goes into absurd mode. I took some elite pikemen against just basic pikemen in a 1v1 (120 people per unit) on flat terrian. Despite having unobjectively better stats across the board My guys were wiped out nearly to the man in a matter of seconds while the much weaker unit only lost maybe a dozen to a superior enemy.

I generally play Skyrim on the difficulty just below legendary now. Legendary doubles health of enemies from that point.
But eh. It works out and you can change it around if you want.

I was playing Oblivion at 1/3rd max, it just gets tedious and annoying above that (especially since a lot of things can just stagger you to death).
